Easy Peanut Noodles

Not sure what's for dinner tonight?

I had a request for a peanut noodle recipe from a friend today, so finally took some time to write out my recipe, since my “recipe” cards tend to be chaotic chicken scratch that don’t make sense to other people. So thought I’d quickly share it here with you all as well.

This is one of my family’s favorite meals. It’s savory and satisfying and packed with vegetables and SO tasty. Perfect comfort food for a cold, rainy day like today. Enjoy!
